In large serving bowl, mix salad greens, onion, cheese and thawed raspberries. Toss, adding only enough dressing to evenly coat ingredients. Arrange greens mixture on individual plates. Place chicken evenly over greens.
In the bottom of the crockpot, whisk together the coconut milk, green curry paste and garlic.
Add in the chicken, vegetables, baby corn, and onion. Note: If you want your vegetables crunchier, just add the onion at this step and add the remaining vegetables in step four.
Place chicken, tomatoes, enchilada sauce, onion, banana peppers, and garlic into slow cooker. Pour in water and chicken broth. Season with cumin, chili powder, salt, ground pepper, and bay leaf. Stir in corn and cilantro. Cover and cook on Low for 6 to 8 hours, or on High for 3 to 4 hours.
